Chocolate Protein Truffles

12 balls
1 cup almond meal
⅓ cup Two Islands Chocolate Pea Protein Powder
⅔ cup desiccated coconut
⅓ cup cacao powder
A pinch of salt
⅓ cup date paste
3 tbsp coconut oil
100g chocolate of choice
 
  1. In a bowl mix the almond meal, Two Islands Chocolate Protein Powder, cacao powder, coconut, and salt together.
  2. Mix in the coconut oil and date paste.
  3. Mix the ingredients together with your hands until the mixture sticks together and doesn’t crumble.
  4. Chop up the chocolate into individual pieces.
  5. Break off a spoonful of the mixture and place a piece of chocolate in the centre.
  6. Roll the mixture around the chocolate piece.
  7. Refrigerate for at least an hour.
