A raw and vegan friendly take on the classic dessert. A delicious biscuit base, topped with a dreamy caramel and banana cashew cream.

1½ cups almond meal
¼ cup melted coconut oil
¼ cup Two Islands Salted Caramel Pea Protein Powder
2 tbsp maple syrup

½ cup almond/cashew/peanut butter (I used almond butter)
⅓ cup coconut or brown sugar (I used brown)
¼ cup coconut oil
2 tbsp coconut cream
1 tsp vanilla essence

Banana Cream

½ cup soaked & softened cashews
¼ cup melted coconut oil
2 small-medium spotty bananas
2 tbsp coconut cream
1 tsp vanilla essence
  1. Place all the base ingredients into a mixing bowl and mix until combined. Evenly place into a small loaf or baking tin. Place in the freezer for 1 hour to set.

  2. While your base is setting, prepare your caramel filling by placing the ingredients in a pot on low heat and stirring until combined and smooth.
  3. Let the caramel cool slightly and pour on top of your base. Place back in the freezer to set.
  4. To make the banana cream, place all ingredients in a food processor and blend until smooth. Pour on top of your set caramel and place in the fridge or freezer for a few hours to fully set. Cut into squares and serve.
