Autumn Treat : CocoBanana Protein Bread

Make this delicious gluten free twist on everybody's favourite banana bread. Including our Vanilla Pea Protein, this is the perfect protein packed treat. Reheat and enjoy with a cup of tea or coffee!

  • 125 grams melted butter, or coconut oil
  • 3 eggs
  • 2 teaspoons vanilla essence
  • 1 teaspoon baking soda
  • 3 very ripe bananas, mashed
  • 3/4 cup almond flour or finely ground almond meal (whichever you can find in your local supermarket)
  • ½ cup gluten free flour
  • ¼ cup Two Islands Vanilla Protein Powder
  • 1 cup desiccated coconut
  1. Pre heat oven to 180 degrees celsius on fan bake setting
  2. Line a loaf tin with baking paper
  3. In a large bowl mix your melted butter (or coconut oil), mashed banana, vanilla and eggs
  4. Add desiccated coconut, ground almonds, flour, Two Islands Vanilla Pea Protein, baking soda
  5. Stir until combined
  6. Spoon mixture into loaf tin
  7. Optional: Top with a few slices of banana and your choice of nuts for an added crunch
  8. Bake for 35-40 minutes or until your loaf is golden and a skewer inserted into the middle comes out clean
  9. Leave loaf to cool in its tin for 10 minutes before you remove and transfer to a cooling rack
  10. Store in an airtight container somewhere cool for up to three days
