Banana Blueberry Protein Muffins

- 2 ripe bananas, mashed
- 2 eggs
- ¾ cup almond milk
- ¼ cup melted coconut oil
- ½ cup honey
- 2 cups flour
- ¼ cup Two Islands Vanilla Pea Protein Powder
- 2 tsp baking soda
- 1 tsp cinnamon
- ½ tsp baking powder
- Pinch of salt
- 1 cup fresh blueberries
- Coconut sugar & cinnamon for topping
- Pre heat oven to 180 degrees
- Line muffin tin with cupcake liners and spray with non stick cooking spray.
- Add wet ingredients to a bowl, bananas, eggs, coconut oil and honey, whisk into a paste texture
- Add almond milk to wet ingredients and whisk until smooth
- Add all dry ingredients in a separate bowl, flour, protein powder, baking soda, cinnamon, baking powder and salt, lightly whisk together
- Add wet ingredients to dry ingredients and stir until just combined
- Gently fold in blueberries
- Spoon batter into lined muffin tin. Top with sugar and cinnamon sprinkle
- Bake for 20 minutes, or until a skewer inserted into the middle comes out clean
