Vanilla Protein and Matcha Bircher

Fresh and bright, this easy breakfast is a nutritious favourite perfect for a quick morning bite or a cosy weekend brekkie. 

1 cup rolled oats
1 serve, 25g, Two Islands Vanilla Pea Protein Powder 
1 tsp matcha powder
2 tbsp chia seeds
2 tbsp desiccated coconut
2 cups plant milk
 
TOPPINGS
1 fresh mango
2 tbsp coconut yogurt
Handful of goji berries
1 tbsp maple syrup

  1. Add all of the bircher ingredients to a bowl and mix well to combine. Cover and leave in the fridge for 30 minutes or overnight to set.

  2. Remove from the fridge and top with the mango, coconut yogurt, berries and maple syrup.
