Salted Caramel Protein Pancakes

These pancakes are super easy to whip up, and are a great way to get in an extra boost of protein in the morning! I love pouring butterscotch or maple syrup on top with a sprinkle of hemp seeds. You could also add in a tablespoon of cacao powder for a chocolate taste.
1 serving (25g) Two Islands Salted Caramel Pea Protein Powder
1 cup gluten-free flour
1½ tsp baking powder
1 tsp cinnamon
1 tsp salt
¼ cup coconut sugar
1¼ cup soy milk
1 tsp vanilla extract
Vegan butter to cook
 
  1. In a bowl, stir together the dry ingredients until combined. Add in the soy milk and vanilla extract, and stir well until fully combined.
  2. Heat a non-stick pan on medium heat. Add a teaspoon of butter and spread around the pan until melted.
  3. Spoon a palm-sized amount of the mixture on to the pan. Cook for a minute on each side – flip once you start to see small bubbles appearing.
  4. Top with your choice of toppings. Olivia used maple syrup or butterscotch sauce, and a generous serving of hemp seeds.
