Salted Caramel Banana Chocolate Muffins

2 servings, 50 grams, Two Islands Salted Caramel Protein Powder
2 large bananas
1⁄2 cup yogurt of choice, Greek yogurt was used for this recipe
4 tablespoons maple syrup
3 tablespoons milk of choice, almond milk was used for this recipe
3 tablespoons peanut butter
1 egg
Dash of vanilla extract
1 1⁄2 cups flour of choice, for this recipe Em & Soph used plain flour
1 teaspoon baking soda
1⁄4 cup chocolate chips, milk or dark

  1. Preheat oven to 200°C

  2. Mash the bananas, and combine them with all wet ingredients (yogurt, maple syrup, milk, peanut butter, egg and vanilla extract). Mix until smooth

  3. Combine all dry ingredients, flour, baking soda, protein powder and chocolate chips, then add to the wet ingredient mixture and stir until fully combined

  4. Grease or line muffin tins, then fill each cup 1⁄2 - 3⁄4 full with the mixture

  5. Bake in the oven for 15 minutes, or until golden

  6. Enjoy!
