Banana Blueberry Protein Muffins

  • 2 ripe bananas, mashed
  • 2 eggs
  • ¾ cup almond milk
  • ¼ cup melted coconut oil
  • ½ cup honey
  • 2 cups flour
  • ¼ cup Two Islands Vanilla Pea Protein Powder
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • Pinch of salt
  • 1 cup fresh blueberries
  • Coconut sugar & cinnamon for topping
  1. Pre heat oven to 180 degrees
  2. Line muffin tin with cupcake liners and spray with non stick cooking spray.
  3. Add wet ingredients to a bowl, bananas, eggs, coconut oil and honey, whisk into a paste texture
  4. Add almond milk to wet ingredients and whisk until smooth
  5. Add all dry ingredients in a separate bowl, flour, protein powder, baking soda, cinnamon, baking powder and salt, lightly whisk together
  6. Add wet ingredients to dry ingredients and stir until just combined
  7. Gently fold in blueberries
  8. Spoon batter into lined muffin tin. Top with sugar and cinnamon sprinkle
  9. Bake for 20 minutes, or until a skewer inserted into the middle comes out clean
