Paleo Chocolate Chip Cookies

10 - 12 minutes

1 egg 
1 cup blanched almond meal/flour 
2/3 cup chocolate chips or chopped up dark chocolate 
1/2 cup almond butter 
1/4 cup sweetener (maple, rice malt or agave syrup) 
1/4 cup coconut sugar 
1/4 cup coconut flour 
2 tablespoons melted coconut oil 
1 serve, 25g, Two Islands Vanilla & Coconut Pea Protein Powder 
1 teaspoon baking soda
1 teaspoon vanilla extract 
Pinch of salt

Optional: to make Keto, instead of coconut sugar add monk fruit sugar or similar. Instead of maple syrup add more coconut oil. 

  1. Heat oven to 180C.

  2. Line a baking tray with parchment paper. 

  3. Place all ingredients into a mixing bowl and stir until well combined. 

  4. Roll into small balls and press down with a fork. 

  5. Bake for 10-12 minutes or until golden. 

  6. Allow to cool for 30 minutes.
