No Bake Chocolate Truffles

1 cup Medjool dates 

½ cup, 40g, Two Islands Vanilla Pea Protein

½ cup cocoa powder

1 tablespoon melted coconut oil

2 tablespoons almond butter

2 tablespoons almond milk

TOPPINGS
Crushed almonds, coconut or grated chocolate

  1. Blitz dates in a food processor. If you don’t have fresh Medjool dates, soak your dates with boiling water for 10-15 minutes and drain them well before using.

  2. Depending on the power of your processor the time to blitz the dates will vary so go off sight/feel. You are looking for the dates to fully break down and start to clump into a ball. Once you are there, add all other ingredients.

  3. Process on high scraping the sides down every few minutes.

  4. When the mixture starts to stick together easily when pinched its done. If it feels crumbly add a touch more almond milk but be careful not to add too much!

  5. Scoop mixture out and roll into balls.

  6. Roll in your preferred topping, I used almonds blitzed in my processor.

  7. Store in a container in the fridge for up to a week.
