No Bake Brownie

1 packed cup dates, soaked in hot water for 10 minutes if not already soft

1/2 cup natural salted peanut butter, use a runny peanut butter for best results

1 serving (25 grams) Two Islands Chocolate Pea Protein Powder 

2 tablespoons cacao powder

1 tablespoon coconut oil, melted

1 tablespoon vanilla extract

2 tablespoons chocolate chips to press on top

1. Blend the softened dates until they break down into little bits. Add the peanut butter and vanilla extract, and pulse until a thick paste forms.

2. Transfer the mixture to a large bowl, and stir in the remaining ingredients. The resulting dough will be a little crumbly but should be soft, think playdough texture, it should hold together when pressed/squeezed into a ball. Add a tad more peanut butter if it's too scraggly.

3. Tightly press the dough into a lined loaf tin, and press a small handful of chocolate chips on top.

4. Pop the tin in the freezer to firm up, less than 1 hour. Before slicing, I recommend cutting it into 10 square pieces as they're very rich. Store in the freezer or fridge.
