Chocolate Coconut Protein Bites

18 - 20 bites

1 cup desiccated coconut
6 tablespoons almond butter
3 tablespoons coconut cream
3 tablespoons maple syrup
2 servings, 50 grams, Chocolate Pea Protein Powder
½ teaspoon Vanilla extract
      
Chocolate Ganache
1 tablespoon boiling water
1 tablespoon coconut sugar
1 tablespoon cacao powder
1 tablespoon melted coconut oil

 

  1. Place the coconut, almond butter, coconut cream, maple syrup, chocolate pea protein and vanilla extract in a bowl and use a fork to combine well

  2. Spoon mixture into a silicone hemisphere tray or hand roll into bliss balls.
  3. Place bites into your freezer for 40 minutes

  4. Whilst the bites are setting, blend the chocolate ganache ingredients with a whisk until smooth and drizzle over the bites when set

  5. Store the bites in a sealed container in the fridge for 7 days or leave in the freezer for 2 months
