Blueberry Lemon Protein Pancakes

1 banana
2 eggs
1 tsp vanilla
2 tbsp spelt flour
½ serving (12.5g) Two Islands Vanilla & Coconut Protein Powder
½ tsp grated lemon rind or 1 tablespoon lemon juice
¼ cup frozen or fresh blueberries
Pinch of salt
Toppings such as maple syrup

  1. Blend/mash eggs, banana, and vanilla together until smooth.
  2. Mix in flour, protein, salt, and lemon rind.
  3. Pour mixture into the pan and place blueberries on top of each pancake.
  4. Flip when the bubbles that form on the top burst.
  5. Cover with maple syrup.
  6. Enjoy! x
