1 tsp vanilla
2 tbsp spelt flour
½ serving (12.5g) Two Islands Vanilla & Coconut Protein Powder
½ tsp grated lemon rind or 1 tablespoon lemon juice
¼ cup frozen or fresh blueberries
Pinch of salt
Toppings such as maple syrup
- Blend/mash eggs, banana, and vanilla together until smooth.
- Mix in flour, protein, salt, and lemon rind.
- Pour mixture into the pan and place blueberries on top of each pancake.
- Flip when the bubbles that form on the top burst.
- Cover with maple syrup.
