Banana Bread French Toast

4 bananas mashed
1 egg
1 tablespoon vanilla
1/3 cup oil (I used rice bran)
1 cup spelt flour
Two servings, 50 grams, Two Islands Vanilla & Coconut Pea Protein Powder 
4 tablespoons coconut sugar
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup almond milk
1 teaspoon cinnamon
1 teaspoon coconut sugar
1 teaspoon vanilla

 

  1. Combine the first portion of flour, protein, coconut sugar, cinnamon, baking powder, baking soda, and salt together

  2. Add bananas, egg, vanilla, and oil to the dry mixture

  3. Gently stir to combine but don’t over mix

  4. Pour into a loaf tin

  5. Bake for an hour at 180 degrees Celsius or until a skewer inserted into the centre comes out clean

  6. Combine remaining ingredients in a bowl to make an egg mixture

  7. Place slices of banana bread into the egg mixture and leave for 1-2 minutes for the mixture to soak into the bread

  8. Fry banana bread until lightly crispy

  9. Optionally, fry banana halves in 1 T maple syrup to caramelise them

  10. Serve with ice cream, maple syrup, and caramelised bananas
