Apricot Vanilla & Coconut Energy Balls

15 energy balls

¾ cup rolled oats
½ cup desiccated coconut
120g dried apricots
50g pitted dates, soaked in boiling water
1 Serve, 25g, Two Islands Vanilla & Coconut Pea Protein Powder 
2 tablespoons melted coconut oil
¼ teaspoon salt
½ teaspoon vanilla

 

  1. Blend oats to a fine flour

  2. Add in all other ingredients to your blender and mix until a bliss ball mixture forms. Be patient, the higher power your blender the better and quicker though!

  3. Roll into balls and pop in the fridge to set for an hour or 2 before eating

  4. Store in the fridge

  5. ENJOY!
